Easy Mediterranean Bowls (Perfect for Meal Prep)

These Mediterranean bowls are one of those meals that look fancy but are incredibly simple to throw together—especially if you’ve already prepped the chicken ahead of time. They’re fresh, filling, balanced, and perfect for lunches or dinners you can actually look forward to eating.

This is one of my favorite ways to use my yogurt-marinated meal prep chicken (Recipe link here). The flavors pair beautifully with quinoa, crisp veggies, creamy hummus, and a bright squeeze of lemon. No complicated dressing needed—everything works together exactly as is.

Meal Prep Tips

  • Store components separately or fully assembled depending on preference.
  • Add hummus just before eating if you want everything extra fresh.
  • These bowls are great cold or slightly warmed (I’ll warm the chicken and quinoa and keep the veggies cold).
