Easy Cookie Dough Bites (no bake)

These are the kind of desserts I make when I want something sweet… but don’t want a project.
No mixer. No oven. No “wait three hours for it to chill properly” energy.

Just stir, roll, eat.

They taste like cookie dough, feel like a treat, and take about five minutes. Which, in my opinion, is the correct amount of effort for dessert.

  • Great for keeping in the fridge when you just want “a little something”

Also: they don’t pretend to be health food.
They’re just dessert. And that’s allowed.


Cookie Dough Bites

Ingredients

  • 1 ½ cups almond flour
  • ¼ cup peanut butter
  • ¼ cup maple syrup
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • ¼ cup chocolate chips (mini if you have them)

Instructions

  1. Add all ingredients to a bowl.
  2. Stir until fully combined and a dough forms.
  3. Roll into bite-sized balls.
  4. Refrigerate for at least 20–30 minutes to firm up.
  5. Enjoy straight from the fridge.

That’s it. Truly.


Notes & Tips

  • If your dough feels too dry, add a tiny splash of maple syrup or peanut butter.
  • If it feels too sticky, add a tablespoon of almond flour.
  • Store in an airtight container in the fridge for up to a week (if they last that long).
