These are seriously so easy to make! If you love strawberry shortcake, you’re in for a treat—these little bites taste incredibly similar, and honestly, I might even prefer them to the real deal. They’re chewy, sweet, and have just the right hint of vanilla and coconut. Best of all? No baking required.
I found my dried strawberries at Target, but I’ve seen them at Trader Joe’s too. Just make sure they’re not freeze-dried—the texture is key here.
These make about 16 snack balls, and they’re perfect to keep in the fridge for a quick grab-and-go treat.
Ingredients (Makes ~16 balls):
- 1 cup (about 10) dates, pitted (If your dates are firm, soak in warm water for 10 minutes and drain well)
- 1/2 cup dried strawberries (mine were sweetened)
- 1/2 cup raw cashews
- 1/2 cup raw macadamia nuts
- 1/2 teaspoon vanilla extract
- 2 fresh strawberries, halved
- About 1/3 cup sweetened coconut flakes, for coating (optional)
Instructions:
- In a food processor, pulse the dates and dried strawberries until they’re broken down into small bits or form a sticky ball.
- Add the cashews, macadamia nuts, vanilla extract, and fresh strawberries. Pulse again until well combined and the mixture holds together.
- Using your hands, roll into 1-inch balls (golf ball size). The warmth of your hands will help the mixture stick together.
- Pulse the coconut flakes in a blender or food processor to make them finer, then roll each ball in the coconut to coat.
- Place in the fridge or freezer for about 15 minutes to set.
Store in an airtight container in the fridge for up to a week.
I hope you love these as much as I do!
