Peanut Butter Filling
- 2/3 cup almond flour
- 1/3 cup peanut butter
- 2 Tbsp maple syrup
- Pinch of sea salt
Chocolate Topping
- 1/2 cup dark chocolate chips
- 1 tsp coconut oil
Instructions
1. Make the Peanut Butter Layer
In a small bowl, mix together the almond flour, peanut butter, maple syrup, and a pinch of sea salt until a thick dough forms.
Press the mixture into silicone molds (1–2 oz baby food prep silicone trays work great). You can also roll the mixture into small balls and flatten slightly if you don’t have molds.
2. Melt the Chocolate
In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second increments, stirring between each, until fully melted and smooth.
3. Add the Chocolate Layer
Spoon or pour melted chocolate over each peanut butter base, smoothing the tops if needed.
4. Freeze Until Set
Place the molds in the freezer for 15–20 minutes, or until the chocolate is fully set.
5. Store & Serve
Pop the peanut butter cups out of the molds and store in an airtight container in the freezer. Once fully set, they can also be kept in the fridge for a slightly softer texture.
